Now behold, it came to pass, that I, Jacob, having ministered much unto my people, in word, (and I cannot write but a little of my words, because of the difficulty of engraving our words upon plates,) and we know that the things which we write upon plates, must remain;

I, Jacob, taught my people many things. I can only write a little because it’s hard to carve words on metal plates. We know that what we write on plates will last.

Paraphrase

I’ve spent years teaching my people, but I can only record a fraction of what I’ve said. Engraving words onto metal plates is hard, slow work. Still, we know that what we carve here will last.
